Livingstone Farm Stand: Protein

This month's farm stand highlight is on protein and it's importance within the context of our farm stand. Remember back to our farm history story, this farm was a well known producer of elk for decades and was active for most of it's history as a working farm. As much as we don't have elk, we do have other options for you to source your protein from, raised the way it used to be. For the love of protein, God created so many incredible sources of meat for us to enjoy.

"Everything that lives and moves about will be food for you.

Just as I gave you the green plants, I now give you everything."

Genesis 9:3, NIV

Here's a little more about the livestock based products we have in stock:

Rainbow eggs - Our eggs have shells in a variety of colours of the rainbow - mostly blue, green, pinks and browns. Our laying hens lay eggs all year round and have access to the outdoors every day (save for a few days in the winter that are just too cold) and they love to peck and scratch for bugs and roots on pasture. Hens lay around one egg a day and lay less eggs when they are stressed by heat or disturbance, and more eggs when the hours of daylight are on the up and up.

Pastured chicken - Our meat chickens are raised in the summer on pasture when the weather is kind enough to provide a safe existence outdoors for them. We are a classified as an artisanal chicken farmer, offering whole chickens and lots of types of cuts as well. Our meat is available as early in the year as June with consistent re-ups of our supply until end of September, then frozen summer stock is available over the winter. We price our pastured chicken around the same pricing as Loblaws Free From Chicken; a premium to the basic factory farmed or artificial environment raised chicken but not so highly priced that families find our chicken inaccessible.

Pastured bone broth - With our excess chicken carcasses, we create bone broth that's processed in a licensed facility using a tried and true recipe for the highly concentrated bone broth. Our recipe uses a 3:1 bone to liquid ratio, creating better bang for your buck in a smaller jar, and is shelf stable for a year from the date of processing.

Berkshire pork - Our heritage Berkshire pork will be available in October, and will grace the shelves of our freezer over the winter. We will have lots of bacon (probably the first to go out of stock), sausages, pork chops, shoulder for pulled pork, and pancetta, and all of the other common cuts of pork that you'd expect from a farm. If this is something you'd have a lot of interest in, please let us know and let's talk about what cuts would be ideal for you. We are keeping a running list of our farm client's preferences so that we can be sure we have in stock what you'd prefer.

Holy cow beef - A neighbor has an incredible working ranch producing grass fed and grass finished beef for bulk order (1/2 or 1/4 of a beef at a bulk price discount), and for smaller orders for sale within our farm stand. We normally keep 1lb packages of grass fed grass finished ground beef frozen in stock for convenience, and offer bulk beef on an as-available basis. Bulk beef interest is usually taken months in advance - make sure to send us a message if you're serious of adding a lot of beef to your freezer for the ultimate convenience move.

Eat well,

The Farmer @ Livingstone Farm 1860
